Chocolate Sheet Cake Cookies.....

I think I've found a new favorite cookie! This recipe is based on a chocolate sheet cake....some may call it a Texas sheet cake....to me it's simply a chocolate sheet cake. 
The recipe I have for a Texas sheet cake is a white cake with almond flavoring....which I'd just about bet would be great as a cookie, too!
This is one of those recipe videos that floats through social media and I finally got around to giving it a whirl.
Ok....on to the recipe....


Chocolate Sheet Cake Cookies

1/2 cup butter
1/3 cup sugar
1 egg
1 tsp vanilla
1 1/3 cup flour
1/2 tsp salt
1 tsp baking powder
1/2 cup melted chocolate chips

Preheat oven to 350 degrees.
Cream together the butter and sugar. Add egg and vanilla.
Gradually add the dry ingredients and mix until combined then stir in the melted chocolate until thoroughly incorporated.
Drop by spoonful onto parchment lined baking sheet.  Bake at 350 for 7 - 8 minutes.  Do NOT  overbake.
Remove from oven. Let cool before frosting.

Chocolate Icing
1/2 cup butter
2 T. cocoa powder
3 T. milk

Place in saucepan over medium heat until melted.....remove from heat and add

2 1/2 cups powdered sugar.

*Let set....store in airtight container....place a sheet of wax paper or parchment between layers.
**I used the smallest scoop (1 Tablespoon)from pampered chef and yielded 32 cookies.

Yummy Goodness Recipes...part 2

Good morning!  Just popping in to share a recipe from my rainy day baking yesterday! This one is for a cinnamon roll swirl cake.  I've made this cake a couple times now and let me tell you....SO good! Who doesn't like cake and who doesn't like a cinnamon roll....besides my daughter-in-law?  Right?! And who wouldn't like a cake that you could eat for breakfast?  Because come on....it's a cinnamon roll in cake form!  
This one went to work with the hubby this morning. 
Okay....on to the recipe....

Cinnamon Roll Coffee Cake

For Cake Batter
2 eggs
1 cup sugar
2 tsp vanilla extract
1 1/2 cups milk
3 cups flour
4 tsp baking powder
1/2 tsp salt
1/2 cup butter melted

Topping Mix
1 cup brown sugar
2 tbsp flour
2 tbsp cinnamon
1 cup butter almost to point of melted, very soft

Sweet Glaze
2 cups powdered sugar
5 tbsp milk
1 tsp vanilla extract

Preheat oven to 350 degrees and prepare 9 x 13 pan with non-stick cooking spray.

 Combine the flour, baking powder and salt....set aside.
Lightly beat the eggs then gradually add the sugar and vanilla.  
Alternate the flour mixture and milk stirring to incorporate after each.
Once mixed, slowly add in the butter and combine.

Pour into the prepared 9x13 baking pan.

Mix together all ingredients for topping until well combined.
Pour over cake batter and swirl with a knife.

Bake at 350 degrees for 35-45 minutes until fully baked....while cake is baking prepare the glaze and set aside.....Pour over cake once it's done and out of the oven.

Yummy Goodness Recipes to Share.....part 1

Wow! I didn't realize it's been a month since I last posted. 
It is a dreary rainy day here in my little corner of the world and I have
a sort-of unexpected day off so I  decided to get out the mixer and make up a few goodies and 
I thought I'd share the recipes over the next few days.
This first one though I made over Easter weekend for a family gathering.
When making something new for a gathering I end up bringing home half of it because it's different.....not what they know they already like. 
This time? No leftovers! 
This is basically a pecan pie filling poured and baked over a bunch of bread chunks instead of in a crust!
I normally make my pecan pie using both white and brown sugar and that is what I used when making this but I think next time I make it it will be with white only.
I found the recipe on pinterest and pretty much went by that but I'm going to share how I intend to make it the next go round.
Even if you don't like bread pudding but you like pecan pie....you will love this!


PECAN PIE BREAD PUDDING

8 cups bread cubes (day old french bread would be a good one)
3 eggs
1 cup white syrup
1/2 cup ganulated sugar
1 tsp vanilla
3 Tbsp. melted butter, allow it to cool.
1/2 tsp. salt
1 tsp. cinnamon
3/4  chopped pecans

Prepare a 9"x 9" baking pan by lining the bottom with a square of parchment paper then spray sides with non-stick baking spray.
Cube the bread and set aside in a large mixing bowl.
In another bowl slightly beat the eggs,,,,,add syrup, sugar, vanilla, and stir to combine. 
Stir in the melted butter, salt, cinnamon and pecans.
Pour the syrup mixture over the bread cubes and gently stir to coat.
Let it rest for a bit to let the mixture soak in.
Bake in a 350 degree oven for 45 minutes.
Serve warm or room temperature and top with this super easy and tasty caramel sauce!

Caramel Sauce

1/2 cup (1 stick) butter
1 cup brown sugar
1/3 cup heavy cream
1 tsp vanilla

Melt butter, brown sugar and cream over medium heat.....bring to a boil and let boil just a couple minutes.....Remove from heat and add  vanilla. 
Will keep for a couple weeks in an airtight container in the refrigerator.

My Booth Space at In K-Hoots.....

Good morning, my friends!  I hope you all are off to a fantastic day!
After spending nearly two weeks either in bed, on the sofa or in the recliner I finally started feeling human again!
I don't know about you but when I can't function all I can do is think about all the things that aren't getting done and I just can't wait until I feel better so I can get busy! So this past Monday and Tuesday I had "off" from keeping from grandson and from my Tuesday job at the Mercantile so I done some much needed cleaning and clearing out in my sewing room, gathered finished and collected items and got them tagged and booth ready.
So off to In K-Hoots I went and gave my booth the attention it desperately needed.
I dug out a little sign that I used many moons ago, gave it a little updating and hung it above my space and gave a little homespun touch to the background.
I also decided to merge my Oakley Brooke items with the Cindy's Homespun items.....
yes, they're different but they are all made by ME! 
And it just simplifies things.....
Baby blankies, burpies and bibs and baby beanies......
Stenciled flour sack towels and crocheted dishcloth sets.....
Aprons......
Gathering baskets.....just in time for gardening season.....
All in one place....

I've also started making those cute and handy little bowl cozies...I have several sets in the works and plan to have them in the booth next week!

Snowfall .....part 2

Here are a couple pics out our front window this morning....it is beautiful.  As long as I don't have to be out in it!  I am SO glad that my husband no longer drives over the road....him driving coast to coast the worry was great enough on a sunny summer day....but in conditions like this the worry was so much greater.  I would have to stay off of social media because of all the accident pics people would share.....especially when they involved semi's.

It finally quit snowing sometime last night.
However, they are still calling for more this morning.....and possible drizzle? 
Oh my! I may be looking at a couple more days of being in.....good thing I don't mind being at home.  There's always something to do here be it chores, spending time in the sewing room or simply getting to sit down and watch a movie......Today?  Yes, I think I will tackle the Christmas trees.

Snowfall .....

I can't remember the last time it snowed THIS much.....has to be at least 14" and it is still snowing.
It had been in the forecast....we had been hearing about it for several days to be expected by midday Friday.....and in anticipation early closings were being called on Thursday night.  Good thing because the weatherman called it....they were spot on.
This is out our back door today.....I wasn't going out any further to get anymore pics!


Most area churches have cancelled Sunday services.  
I spent today doing a few chores and some baking and have chili going in the crockpot for supper.  Tomorrow I plan on spending another day indoors....maybe I'll get to taking down the Christmas trees and decor.  Maybe.   As for the rest of today, I think I'll go close myself in my sewing room.

Apron Finishes.....

Just a few of them.....I think most of these shown have been sold...either ordered or simply sold via my booth at a local shop....and I can tell you more about that in a later post.....
Most of my aprons are of the same style.....it's simply the fabric and sometimes a little embellishment of some sort that change the look ....all of them are fully lined....not so much for making it reversible but for durability.....I make them to be worn....to be used as aprons should be.
Let me know if you'd like one for yourself....or for your little kitchen helper!  My 7 year old granddaughter still loves the ones I've made her!
